Abstract
This article addresses coffee growing from a general perspective and subsequently focuses on the Sierra Norte de Puebla region, with the aim of analyzing and demonstrating the dynamics of the sector, the adequate consumption and the impact on the health of all those that we drink coffee. The process of construction of the article was based on archive information, digital documents and participant observation in the study region, as well as on the analysis of the socio-cultural processes that producers go through, which give us coffee as a food product. This analysis made it possible to describe and understand the dynamics of coffee growing historically and at the same time.
